The Perfect Pint
Takes Time.
We’ve been pulling Guinness at Cheers since the day we opened in 2000. In that time, we’ve never cut the pour short, never skipped the rest, and never convinced ourselves that close enough is good enough.
The two-part pour is not ceremony for its own sake — it’s physics. The nitrogen bubbles need time to cascade: to rise, to settle, to create the dense creamy head that separates a real Guinness from everything else served in a pint glass. Rushing it produces something that looks similar and tastes entirely different.
“We don’t rush a Guinness. Never have. If you’re in a hurry, get a lager — we pour those quickly too.”
The Amber Hours
There’s a reason the Irish brought whiskey to the world. These are not drinks you order in a hurry. They arrive at their own pace, settle into the conversation, and stay until the evening decides to end.
We keep it focused. Three spirits worth drinking, selected because they belong in an Irish pub and nowhere else quite like one.
